I also squeezed the juice of half a lemon in it. I'll be doing some more next week for some seared scallops. Thumbsup

Local fishermen are selling Lobsters, Crabs cheap, and the turbot farm is doing something similar

There's a 'steak stockpile' caused by people not eating out, and as was said before, the expensive custs not being sold. Flip side is that mince andcheaper cuts are increasing in price

Since lockdown we've been having a fishmonger turn up every Wednesday. I've taken to slightly modifying a dish I had years ago in St. Ives.

Scallops with cointreau smoked pancetta and croutons. Its delicious 😋

Who remembers these? My favourite was the meatball priazzo...absolutely moreish. Sadly they stopped making them late eighties but if you can be arsed you can do them yourself.

When I cook a bolognese sauce I do it in the slow cooker and it's enough for about 6/8 servings. So, today, I've defrosted a batch and made a big lasagne with it. It really is simple, just make a white cheese sauce and layer the dish with alternate meat, cheese sauce and pasta until you get to the top of the dish. Pour the rest of the cheese sauce over it and stick it in the oven for 40/45 mins. Delish!

I did my Carbonara yesterday for first time this summer.

Literally a 5 minute dish

Never disappoints.

Just a little cheat tip...On New Years Eve I cooked us a Beef Wellington and the best thing to have with it is Madeira wine sauce. Well, I'm not going to go out and buy a £20 bottle of Malmsey just for a sauce, so bought a packet of Bonne Cuisine Madeira Gravy mix from Morrisons. OK it's not the real thing but it is quite passable and I've used it for a number of years to accompany a Wellington or a Tournedos Rossini.
